
Calypso Pizza

20 oz. refrigerated pizza dough |
6 oz. pizza sauce |
3/4 c. cooked white meat chicken, diced |
1/3 c. bacon bits |
1/3 c. diced ham |
4 oz. small chunked pineapple |
3 Tbsp. green bell pepper, diced |
3 Tbsp. red bell pepper, diced |
3 Tbsp. Bermuda onion, sliced |
1 Tbsp. freshly chopped garlic |
1 Tbsp. Caribbean Jerk spice |
4 oz. Wisconsin Monterey Jack cheese, shredded |
4 oz. Wisconsin Cheddar cheese, shredded |
4 oz. Wisconsin Mozzarella cheese, shredded |
Directions:
1. Stretch dough onto a 16-in. baking sheet and top with pizza sauce. Set aside.
2. Combine chicken, bacon bits, ham, pineapple, green and red peppers, onion, garlic, and Caribbean Jerk spice. Set aside.
3. Combine three cheeses. Sprinkle half the cheese over sauce. Follow with topping mixture previously set aside, spreading evenly over whole pie. Sprinkle other half of cheese blend over top and bake directly on rack at 400° for 18-20 min., until crust is golden and the toppings are hot and bubbly.
