
Fish Stuffed Peppers

1 lb. haddock fillets, skinned and cubed |
4 large sweet peppers |
1/4 c. long grain rice, cooked |
1 tsp. Dijon mustard |
2 oz. cheese, grated |
2/3 c. mushrooms, sliced |
fresh chopped parsley, to garnish |

Sauce: |
2/3 c. créme fraiche |
1/4 c. dry white wine |
|
salt and black pepper |
Directions:
Microwave Power: 800 Watt
1. Slice the top off the peppers - reserve; remove seeds and core; cook on HIGH for 6 min.
2. In a bowl, mix together the rice, mustard, half of the cheese, mushrooms and the sauce ingredients. Stir in the fish.
3. Stuff the pepper with the fish mixture, sprinkle the remaining cheese on top and replace lid. Place in a suitable dish, cook on HIGH uncovered, for 6 min.
4. Garnish and serve as a starter.
